UpTown Market Opening June 2nd

UpTown Market will be opening for the season in two weeks, on Thursday, June 2nd, at Waterloo Square. Despite the construction on King Street, we have decided that our best course of action is to stay in our usual location, although we’ll be pushing back towards The Shops somewhat. We will be open Thursdays 3–7pm until the end of October.

We appreciate your support and understanding through the challenges posed by the ION LRT construction. We are looking forward to continued growth once King Street is reopened, especially since the new LRT stop will be very close to the market.

Announcing the 2016 Board

The Waterloo Farmers and Crafters Market Cooperative is pleased to announce that our AGM was a success, and we have elected a full board for the 2016 season.

We thank Bhupi Rajput and Shelley Waine for their service on the board, and wish them well in their other endeavours.

Brenda Hodge will continue as treasurer, completing her two-year term in 2017. Nathan Klassen and Kathleen Stahlbaum have each been elected to a second term on the board. Anita D’Hondt, Sylvia Hook, and Mandy Tempest are newly elected board members; all of them have been involved with the market as vendors and/or as volunteers in the past, as well. Board positions and roles will be determined at the board’s upcoming meeting on April 7th.

Several changes to the bylaws were also passed at the AGM, primarily strengthening the coop’s existing rules, and adding a system for handling infractions. You can view the updated policy manual here.

The board has received a number of applications for the position of on-site coordinator, and will be reviewing those in the coming weeks, in order to have that position filled before the market opens for the season in late-May. We are also seeking volunteers for the upcoming market season; whether you’re interested in the behind-the-scenes administration of the market or just want to help with set-up or take-down, we could use your help! Because of the LRT construction, the coming year is likely to be a challenging one for the market; the board is exploring alternate locations with the city, due to noise and dust concerns with the construction adjacent to the square. Stay tuned for details as the season draws near. The board is aiming to run a pared-down market, focusing on vendor retention and market promotion in the community. We will not be organizing live music (buskers welcome!) or special events for the 2016 season; look for those resuming once we’re through the construction challenges.

Bruschetta is one of my favourite summer meals — it’s easy, delicious, and a great way to celebrate fresh, local produce. I like to use tomatoes with a strong, sweet flavour — if you’re not sure which ones to use, ask your produce vendor! This is a recipe that is easy to adapt to your own tastes and the ingredients you have this week — change the herbs, use different quantities of the seasonings, add or omit extra toppings.

Quick Pickled Radishes

Ingredients:

1 Tbsp sugar
1 tsp kosher salt
2/3 cup water
1/3 cup white vinegar
Small bunch radishes, washed and leaves removed, sliced thinly
Artisan bread, sliced
Fresh butter or softened cream cheese

Method:

  1. Combine the sugar, kosher salt, water and white vinegar in a medium non-reactive bowl. Stir to dissolve the solids. Add the sliced radishes. Cover and refrigerate for at least 3 to 6 hours.
  2. Serve radishes on thickly sliced artisan bread spread with fresh butter or softened cream cheese.

Crispy Thai Cucumber Salad

Ingredients:

3 tbsp lime juice or rice vinegar
2 tbsp water
1 tbsp fish sauce
2 tsp granulated sugar
1 large English cucumber, thinly sliced
2 shallots, thinly sliced
1 ½ tsp chopped fresh chilies
2 tbsp chopped roasted peanuts, optional
2 tbsp fresh mint leaves
2 tbsp fresh cilantro leaves

Method:

  1. In a large bowl, whisk together lime juice, water, fish sauce and sugar until sugar dissolves.
  2. Add cucumber, shallots and chilies. Toss together and let stand for 30 minutes.
  3. Sprinkle with peanuts, mint and cilantro.

Makes 4 servings
